ÆBLESKIVERS (DANISH PANCAKES)

Spherical Danish pancakes made in a traditional Æbleskivers cast-iron pan. Crisp outside with a light and fluffy inside. Made with wheat flour or cornmeal (GF). Choice of two toppings.

Hibiscus Limeade

Hibiscus infused tea with fresh squeezed lime juice. Simple syrup. Lime zest. 

Sour Sumac Lemonade

Sumac infused tea with fresh squeezed lemon juice. Simple syrup. Lemon zest.

Catfish Basket (GF)

Seasoned cornmeal fried catfish nuggets. Side of pickled slaw and a made-in-truck tarter sauce. Served with two Æbleskivers.

Frikadeller (Danish Meatball) Basket

Pan-seared bison meatballs in brown butter and onion gravy. Side of pickled slaw. Served with two Æbleskivers.

Catfish Boat

Refried beans and ducky rice. Topped with seasoned cornmeal fried catfish nuggets. Side of pickled slaw. Served with one Æbleskiver.

SIDES

Ducky Rice (GF)

Duck stock infused jasmine rice. Fried with onions, garlic, and duck pâté. Garnished with green onion and parsley.

Refried Beans (GF)

Slow cooked black beans with avocado leaves, onion, garlic, and chilis. Refried in duck fat.

Pickled Slaw (GF, V)

Shaved cabbage and red onion. Pickled in red wine vinegar.
